Ingredient


4-5 Ripe Tomatoes, blanched and skin removed, 4-5 Garlic Cloves , finely Chopped, 1 tsp Olive Oil, Salt to taste , Pepper to taste , 2 -3 Cups Vegetable Stock, 1 tsp Oregano , 1 tbsp Cream , 1 tbsp cornflour , mixed in little water, Few Basil Leaves , torn .

Procedure

Firstly , wash the tomatoes . Make a small incision over it and blanch till soft . Remove and rinse in cold water to stop cooking process further . Then remove the skin and find them in a mixer . In a pan, heat oil , add the chopped garlic and sauté for few seconds . Seive the tomato purée in it and mix . Add the stock and give it a boil. Add pepper and oregano and mix it . Cook till flavours mature . Add salt and cornflour water and allow to thicken a little. Mix in the torn basil leaves and give it a boil . Lastly add cream and mix and switch off the flame. Fry some bread croutons and help the servings .. Serve this piping hot soup and enjoy winters !!
