Ingredient


3 tbsp Oil , 1 big onion , julienned , 3 bay leaf , 3-4 green cardamom , 4-5 Cloves , 2 black cardamom, 3 Star anise, 1 tsp Coriander Powder, 1 tsp Cumin Powder, 1 tbsp Garam Masala , Juice of 1/2 lemon, Salt to taste , 1/2 tsp red chilli powder , 1/2 tsp black pepper powder, 1/2 cup fresh corn , boil it, 1 tbsp Ghee, 1 Cup basmati rice , soaked , 11/2 Cup Water, 1/2 cup Coconut milk , 1 cube of veg or chicken stock , soaked in little warm water .

Procedure

Heat oil in a pan , add the onion and the whole spices and cook till brown . Add the powdered spice and mix till the fragrance is released . Add th corn , and mix well . Add the rice and mix it . Add the water , coconut milk and vegetable stock cube , little salt , as cubes already have salt in it and ghee . Cover and cook till done . Water may be needed little , so keep checking . Garnish with parsley or coriander . Serve with curry or raita !! You can also replace corn with carrot or chicken !!
