Ingredient


1 tsp Panch Phoron , 1 small Aubergine , brinjal , 5-6 French beans , 2 green chillies , 2 pointes gourds , Parwal 1 medium potato, 1 carrot, 200 gms pumpkin , A handful of spinach, 1/2 a large sweet potato, Salt to taste , 2 bay leaves , 1/2 tsp Cumin Seeds , 1/2 inch piece ginger , 2 dried chillies, 1 tsp Sugar, 1/2 tsp red chilli powder , 1 tsp turmeric powder , 2 tbsp mustard oil .

Procedure

Cut the vegetables into 1 inch dice Cut French beans into 1 inch pieces Slit green chillies Wash and tear the spinach leaves Grind ginger and cumin seeds to paste Heat mustard oil in a pan . Add the Panch Phoron and let it splutter Z ass bay leaf and dry red chilli . Add ginger cumin paste and little water . Let it cook . Add the vegetables along with spinach and cook till soft . Then add the dry spice and cook till done . Add the sugar and mix well . Serve hot with chapati !!
